Delight your loved one by giving her the most exquisite delicacies France has to offer: crystallized violets and mimosa. Each favor contains approximately 45 crystallized violets and is wrapped in clear cellophane. (2.64 oz)

Preparation: the violets are picked up in winter and early spring. After their stems have been removed, the flowers are washed, dried and then soaked in syrup of candy sugar. Once taken out, they are powered with confectioner's sugar and then dried and dehydrated for 24 hours. They are then soaked again in syrup at a high temperature and laid out to dry in the open.

Dragées are traditionally associated with weddings. Legend says that as early as the second century B.C., it was custom in Rome to distribute dragées to crowds of people at a wedding. As for the making of sweet flowers, it dates from the 13th century. During that time, the flowers were simply cooked in sugar and sold by apothecaries. Two hundred years ago, a few candy-makers tried to make confections out of natural flowers. That is how the Candiflor shop was born in 1818 and since then, violets, roses, and mimosa have been turned into delicious confections exclusively by hand.
