Gascogne is an area of southwest France that is famous for its medieval towns and villages called “bastides” and its Armagnac brandy. The name “Armagnac” comes from a nobleman called Arminiacus who was given a part of the Gascony region called Armagnac by Clovis. Armagnac lies in the foothills of the Pyrenees and gave its name to its kind of brandy, made of the same grapes as Cognac and undergoing the same aging in oak barrels. Armagnac, however, is only distilled once at a lower temperature than Cognac, meaning that Armagnac retains more of the fruit character. Armagnac is the oldest eau de vie dating back to the 12th century and it was mentioned on written work as early as the 14th century under the name of “Aygue Ardente”. The alcohol was later used to keep wine during its transportation to Northern Europe. It was later distilled and aged in oak barrels and was drank as liqueur brandy from the 16th century on.
Ingredients: prunes, almonds, sugar, egg white, unleavened bread, Armagnac.
